Mash the bananas until they form a smooth paste.
Whisk together the egg whites and the egg until smooth, then add the vanilla essence and Greek yoghurt.
Next, add the dry ingredients: the oat flour, baking powder and cinnamon.
Grease the tin with butter and dust evenly with flour, then pour the mixture into the tin and bake in the oven for 50 minutes at 200°C.
Sauté the garlic and onion until golden brown.
Blanch the tomatoes to remove the skins, then add them to the pan with the garlic and onion.
Add water and cook over a high heat for 3 minutes.
Blend everything until smooth.
Return to the pan and cook for 5 minutes, seasoning with salt and pepper to taste.
